Hawaiian Meatballs

  • 1 1/2 lbs. ground beef
  • 2/3 c. cracker crumbs
  • 1/2 c. chopped onion
  • 2/3 c. evaporated milk
  • 1 tsp. seasoned salt
  • 1/3 c. flour
  • 3 Tbsp. shortening

Sweet and Sour Sauce:

  • 1 can (13 1/2 oz.) pineapple chunks
  • 2 Tbsp. cornstarch
  • 1/2 c. vinegar
  • 1/2 c. brown sugar
  • 2 Tbsp. soy sauce
  • 2 Tbsp. lemon juice
  • 1 c. chopped green pepper (optional)

Meatballs: Combine first 5 ingredients, mix lightly. Shape into 30 balls. Roll in flour and brown. Drain fat. Prepare sweet-sour sauce and pour over meatballs. Simmer covered for 15 minutes.

Sauce: Drain pineapple. Measure syrup and add water if needed to make one cup. Blend juice and cornstarch until smooth. Stir in rest. Cook until thickened and clear. Add pineapple and green pepper. Cover and simmer over low heat 15 minutes.
