Griddle Cakes
- 1¼ cup sifted all-purpose flour
- 2½ tsp. double-acting baking powder
- 2 tbsp. sugar
- ¾ tsp. salt
- 1 egg
- ¾ cup milk
- 1 tsp. vanilla
- 3 tbsp. melted butter or margarine
Preheat Electric Skillet to 390 degrees F.
Sift together flour, baking powder, salt and sugar in a bowl. In a small bowl beat egg white until the soft peak stage and set aside. Beat egg yolk, milk, vanilla and melted butter. To dry ingredients stir in egg yolk mixture, very slowly stir until dry ingredients are moistened and fold in egg white. Drop batter from a large spoon onto a lightly greased skillet. Cook until rim of each cake is full of broken bubbles and underside golden brown. Serve while hot with butter, syrup or sweet preserves. (Batter will be thick) Yield 10 to 12 cakes.
For “Banana Cakes” fold into batter two bananas, thinly sliced.
