Filipino Pancakes (Sweet Pancakes)

  • 1 cup flour
  • ¼ cup & 2 tbsp. sugar
  • 1 tsp. baking powder
  • 1 egg
  • 1/3 to ½ cup milk

Mix egg and milk into dry ingredients – batter will be thick. Fry pancakes in about ¼” of oil. Because it is thick check center to be sure it is cooked. Frying pan should be on medium heat. Makes 8 – 4″ pancakes.
