Fresh Mango Pie #2

Lorraine Murakami Ishimaru, Class of 1936

Baked 9-inch pie shell:

  • 2 blocks margarine
  • 1/2 cup sugar
  • 2 cups flour
  • 3/4 cup walnut, chopped big

Cream margarine and sugar well until fluffy. Add flour and walnuts and mix well; press evenly in pan. Bake at 350 degrees for 30 minutes or until done.

Filling:

  • 3 pkgs gelatin
  • 1-1/2 cups cold water
  • 1-1/2 cups boiling water
  • 1-1/2 cups sugar
  • 3/8 tsp salt
  • 6 Tbsp lemon juice
  • Few drops yellow food coloring
  • 7-1/2 cups firm ripe mangoes, diced small

Sprinkle gelatin over cold water to soften. Add boiling water, sugar, salt and stir until thoroughly dissolved. Add lemon juice and food coloring; stir to combine. Cool. Add mangoes to mound. Pour into baked pie shell. Chill till firm. May be served with whipped cream.

Yield: 24 servings
