French Breakfast Puff

  • 1/3 cup Butter
  • 1/2 cup Sugar
  • 1 Egg
  • 1-1/2 cups Flour, all-purpose
  • 1-1/2 teaspoons Baking Powder
  • 1/2 teaspoon Salt
  • 1/2 teaspoon Nutmeg
  • 1/2 cup Milk

In a mixing bowl, cream butter and sugar. Mix in the egg. Sift flour, baking powder, salt and nutmeg into a bowl. Add alternately with milk to the butter mixture. (Start and end with dry ingredients).

Grease muffin pans and fill 2/3 full with batter. Bake in a preheated 350° oven until golden brown. (For small muffins: 15 to 18 minutes. Medium size: 20 to 25 minutes. Large size: 25 to 30 minutes.)

Roll in cinnamon mixture and eat while still hot.

Cinnamon Mixture:

  • 1/4 cup Sugar
  • 1/2 teaspoon Cinnamon
  • 3 tablespoons Butter, melted

Mix sugar and cinnamon together. Roll muffins in melted butter, and then in cinnamon mixture.
