Creamed Mushrooms
- 2 Tbsp chopped green onions
- 2 Tbsp butter or margarine
- 1/4 cup sifted flour
- 1 tsp salt
- Pepper
- 1-1/2 cups milk or thin cream
- 1/2 cup sauterne or other white table wine
- 2 cups chopped, cooked spinach, packed
- 1/2 cup cooked mushrooms
Cook onions in butter a few minutes. Stir in flour, salt and pepper. Slowly stir in milk, cook and stir until mixture boils and thickens. Add wine and cook few minutes longer. Be sure spinach is well drained and all liquid pressed out. Add spinach and mushrooms to sauce; heat well.
