Chinese Pretzels

Temperature: 350° – 375°

Yields: 100 pretzels

Total Time: 3 hours

  • 2-3 eggs
  • 1 1/2 c. sifted flour
  • 1 1/2 c. cornstarch
  • 3/4 c. sugar
  • 2 c. water (ice cold)
  • 1/4 tsp. salt
  • 1 tsp. vanilla
  • Toasted sesame seeds
  • Oil for frying

1. Beat eggs, add sugar and blend until dissolved.
2. Add cornstarch, flour, salt, and vanilla. Mixture will be thick and hard to stir.
3. Mix well and then add cold water.
4. Heat oil in large skillet or frying pan. Irons should be placed in the pan at this time.
5. Sprinkle batter with sesame seeds and deep fry until golden brown.
6. Blot pretzels on several layers of paper towels. Cool thoroughly and store in air tight containers.

NOTES:
* Be sure oil and pretzel irons are thoroughly heated or batter will be greasy or stick to the irons.
* Portion batter into small bowls and keep it in a pan of ice. Refrigerate unused portion. The greater the temperature difference of the batter and the oil, the better the design will keep its shape.
* A good idea is to have two skillets, 1 at 350° for cooking and the other at 375° for the irons and initial frying.
