Chinese Cookies
Karen Ishikane Tani, Class of 1965
- 1 cup Crisco
- 1 cup sugar
- ½ tsp baking soda
- 1 egg, unbeaten
- ½ tsp salt
- 1 tsp vanilla
- 3 cups flour
Cream shortening adding in sugar gradually. Beat in egg. Sift in the rest of the dry ingredients slowly, mixing well after each addition. Add in vanilla. Roll dough into small balls. Place on ungreased cookie sheet and press flat with fork. Bake in 350 degree oven until nicely browned, about 15 minutes.
NOTE: You may also flatten with bottom of a glass cup and decorate with cookie decors or food coloring.
