Chicken Papaya

- 1 chicken fryer, cut up
- 1 Tbsp. cooking oil
- 2 or 3 cloves garlic, mashed
- 1 thumb-size piece ginger, sliced
- 1 tomato, sliced
- 1 large onion, sliced
- 2 Tbsp. patis*
- Water to cover
- 1 large green papaya, peeled, seeded, and chopped into 2″ cubes
Saute chicken in oil and garlic, then add all other ingredients except papaya. Simmer until chicken is almost done, then add papaya. Cook until tender. Adjust seasoning to taste.
