Butter Mochi 2

  • 1 pound Mochiko
  • 2-1/2 cups Sugar
  • 2 teaspoons Baking Powder
  • 5 Eggs, beaten
  • 3 cups Milk
  • 1 teaspoon Vanilla
  • 1/2 cup (1 stick) Butter, melted and cooled
  • 1/2 cup Coconut Flakes

Combine mochiko, sugar and baking powder in a mixing bowl. Combine the eggs, milk and vanilla; add to the dry ingredients. Mix in butter. Add coconut and mix well. Pour in a greased 9 x 13 inch pan.

Bake in a preheated 350° oven for one hour.
