- 3-1/2 cups Mochiko
- 1-1/2 teaspoons Baking Powder
- 3 cups Milk
- 2 cups Sugar
- 4 Eggs, beaten
- 1/2 cup Butter (1 stick), melted
- 1 teaspoon Vanilla
- 1/2 cup Grated Coconut
Combine mochiko and baking powder. In a saucepan, combine milk and sugar. Heat until the sugar is dissolved. Add the eggs and butter. Whisk constantly to keep the eggs from cooking. Add the mochiko mixture and whisk. Add the vanilla and coconut and mix well. Pour into a 9 x 13 inch pan.
Bake in a preheated 350° oven for 1 hour.
