Butter Mochi I
- 1/3 cup Butter
- 2-1/4 cups Sugar
- 1 can (12 ounce) Evaporated Milk
- 1 can (13-1/2 ounce) Coconut Milk
- 1/2 cup Water
- 1 teaspoon Vanilla
- 4 Eggs, beaten
- 1 pound Mochiko
- 2 teaspoons Baking Powder
Cream butter and sugar in mixing bowl. Add evaporated milk, coconut milk, water and vanilla. Mix well. Add eggs and mix well. Add the mochiko and the baking powder and stir until it makes a smooth batter. Pour into lightly greased 9 x 13 inch pan.
Bake in a preheated 350° oven for 1 hour. Cut into serving pieces with a plastic knife.
