Breakfast Brunch-Tofu Loaf

Mabel Tanaka

  • 1 block tofu (sliced into cubes, drained in colander in refrigerator about 1 hour or overnight; mashed)
  • 1 tray imitation crab, sliced smaller
  • 2 eggs, beaten
  • Shiitake mushrooms (soaked in water, squeezed and minced)
  • 1 carrot, grated
  • 2-3 stalks green onions, sliced
  • 1/2-3/4 c. mayonnaise
  • oyster sauce, to taste
  • 1-1/2 to 2 pkg. iriko Hondashi (Japanese seasoning)

Mix to combine all of the above ingredients. Pour into square casserole dish sprayed with PAM first. Bake at 350 degrees for about 35-40 minutes. (May also microwave.)

For larger group, may use 2 blocks tofu and adjust seasonings.

For Oriental Breakfast Brunch, this is good with takuan, tsukemono, dried kiri daikon and kiri kombu koko; miso soup, rice, and green tea.
