Beef Kabobs

Class of 1978

  • 1 lb beef cut into strips 4-inches long and 1/8-inch thick; thread meat on skewers by weaving skewer in and out
  • Whole onion cut into large wedges; bell pepper cut into large wedges; broiler mushrooms with stems removed; cherry tomatoes; pineapple chunks.

Marinade Sauce:

  • 3/4 cup soy sauce
  • 1/2 cup sugar
  • 1 garlic clove, crushed
  • 1/2-inch ginger, crushed
  • 1/4 cup sherry or sake
  • 2 tsp Worcestershire sauce
  • 1 Tbsp catsup
  • 1 Tbsp sesame seed, toasted and crushed
  • 1 Tbsp sesame oil

OR

  • 1/2 cup brown sugar
  • 1/2 cup soy sauce
  • 1/4 cup sake or sherry
  • 1/4 tsp ajinomoto
  • 1 clove garlic, crushed
  • 1-1/2-inch ginger root, crushed
  • 1 Tbsp green onion, thinly sliced

Marinate meat at least 1/2 hour for flavor and to tenderize. Marinate the other ingredients with the meat the last 15 minutes. Arrange meat and other ingredients on skewers, ending with the onion. Broil, turning once and basting occasionally until desired doneness, about 3-4 minutes. Serve hot.

Yield: About 2 dozen sticks
