Beef Cocido

  • ¾ lb. beef, cut into 8 pieces
  • ¾ lb. pork, cut into 8 pieces
  • 1 Chorizo de Bilbao (sausage)
  • 3 pieces of yellow sweet potato peeled and cut in halves
  • ½ head cabbage, divided into six parts
  • 1 cup lima beans
  • 6 saba (small-sized ripe ice cream banana)
  • 1 cup tomatoes, chopped
  • 1 cup onions, sliced
  • 2 tbsp. oil
  • Salt and pepper to taste
  • 2 cup broth

Place beef, pork and chorizo in a pan. Add enough water to cover. Boil. When meat is almost done, add the vegetables and peeled bananas. Cook until done. Set aside. Saute garlic in oil until brown. Add onion, tomatoes, and meat. Add 2 cups of broth and all the boiled vegetables. Season with salt and pepper and cook until done.
