Gelatin Cake

  • 1 yellow cake mix
  • 2/3 cup oil
  • 4 eggs, unbeaten
  • 1 tsp. lemon extract
  • 1 pkg. lemon gelatin
  • 1 cup hot water
  • (add 2 tbsp. sugar in hot lemon gelatine and stir, if it is sour)

Prepare gelatin by adding 1 cup hot water, stir well, and cool. Put cake mix into large bowl and add the oil and 4 eggs, one at a time, then the lemon extract and finally the jello. Bake in two 9-inch cake pans that have been greased then covered with wax paper and lightly greased again, in 375 degrees oven for 40 minutes.
