Candied Coconut Chips

  • 1 coconut
  • 1 1/2 c sugar
  • 3/4 c water

Slice coconut meat into thin strips, removing the brown skin portion, if desired.

Combine with rest of ingredients and let boil for about 20 minutes, stirring frequently until all the water evaporates. (Use high heat and when bubbling, turn off: repeat this for the 20 minute period.) Good candy should be white when done, and not burnt.
