Mango Seed #2

Mrs. Richard Umeno – Kawailani

  • 15 green mangoes
  • 2½ c brown sugar
  • 1 c water
  • ½ tsp red food coloring
  • 1 tsp Kitchen Bouquet
  • ⅛ tsp mango seed spice

Peel mangoes and slice into 4 sections. (Remove seeds.) Salt overnight.

Wash off salt and dry for 2 days in hot sun.

Wash again and wipe dry with dish towel.

In a pot, boil brown sugar and water.

When boiling point is reached, add the prepared mangoes, and spices and ingredients.

Cook on medium heat until thick.

Lower flame, and simmer until very thick.
