White Fruit Cake
Mrs. Alice Tanaka – Haina Macadamia
- 3½ c flour
- 1 tsp salt
- 1 T baking powder
- 1 box raisins
- ½ lb. nuts, chopped
- 1 jar fruit mix
- 1½ c sugar
- 1 c butter
- 4 egg yolks
- 1 tsp vanilla
- 2 T lemon juice
- 2/3 c milk
- 4 egg whites
Sift flour, salt, and baking powder. Add raisins, nuts and fruit mix.
Cream butter and sugar and beat well. Add beaten egg yolks, vanilla and lemon juice. Add flour to creamed mixture, alternately with milk. Fold in stiffly beaten egg whites.
Bake in greased pans, lined with wax paper for about 4 hours at 250° F.
