Stuffed Turkey Roll

  • 1 lb. ground turkey
  • 1 egg
  • 1/2 cup quick oats
  • 1/2 tsp. salt
  • 1/4 tsp. pepper
  • 2 slices bacon, cut in half
  • STUFFING:
  • 1/4 cup chopped onion
  • 1/4 cup chopped celery
  • 4 Tbsp. margarine
  • 2 cups fresh bread cubes
  • 3/4 tsp. poultry seasoning
  • 1/4 cup water

Combine turkey with egg, oats, salt and pepper. Set aside. In a skillet, saute onions and celery in margarine. Add bread cubes, poultry seasoning and water. On waxed paper, pat turkey mixture into a 9×12 rectangle. Spread stuffing mixture over turkey mixture. Roll up turkey, jelly roll style, starting from narrow end. Press edges to seal. Bake in a greased baking dish, sealed edge down. Lay bacon strips crosswise over roll. Bake uncovered at 325° for 55 to 60 minutes.
