Pumpkin Apple Streusel Coffee Cake
- CAKE:
- 2 1/2 cups flour
- 2 cups sugar
- 1 Tbsp. pumpkin pie spice
- 1 tsp. baking soda
- 1/2 tsp. salt
- 2 eggs, lightly beaten
- 1 cup canned pumpkin
- 1/2 cup oil
- 2 cups finely chopped apples, peeled
- STREUSEL TOPPING:
- 2 Tbsp. flour
- 1/4 cup sugar
- 1/2 tsp. cinnamon
- 4 tsp. margarine
Cake: In large bowl, combine first five ingredients; set aside. In medium bowl combine eggs, pumpkin and oil. Add liquid ingredients to dry ingredients; stir just until moistened. Stir in apples.
Streusel Topping: In a small bowl, combine dry ingredients. Cut in margarine until mixture is crumbly. Set aside.
Pour batter into greased 9×13 baking pan. Sprinkle streusel topping over batter. Bake in preheated 350° oven for 35 to 40 minutes, or until toothpick comes out clean.
VARIATION: Spoon batter into greased muffin pans or in pan lined with paper baking cups. Fill 3/4 full. Sprinkle streusel topping over batter. Bake at 350° for 35 to 40 minutes. Yield: 18 muffins.
