Turkey Croquette

  • 1 cup milk or ½ cup milk and ½ cup meat stock
  • 5 tbsp. flour
  • 3 tbsp. fat
  • ½ tsp. salt
  • ¼ tsp. pepper
  • 1 cup chopped or ground turkey
  • 1 cup dry bread crumbs
  • 1 egg

Make a thick sauce with milk, flour, fat, salt and pepper. Fold in the meat. Cool. Divide cooked mixture in 8 parts and form into a ball; coat with bread crumbs then roll on a board to form a cylinder; coat with egg and crumbs again. Chill thoroughly and fry in deep fat. Serve with cream of mushroom sauce.
