Renkon Salad

  • 10-inch fresh lotus root, pared and sliced thin
  • 1/3 cup vinegar
  • 1/4 cup water
  • 1 tsp. salt
  • 1/4 tsp. MSG
  • 3 Tbsp. sugar
  • 1/4 cup grated carrots
  • 1 tsp. black sesame seed

Combine all ingredients except carrots and sesame seed. Gently boil until clear (4 to 5 minutes). Mix in carrots and sesame seed. Cool. Serve chilled.
