Renkon Salad

- 10-inch fresh lotus root, pared and sliced thin
- 1/3 cup vinegar
- 1/4 cup water
- 1 tsp. salt
- 1/4 tsp. MSG
- 3 Tbsp. sugar
- 1/4 cup grated carrots
- 1 tsp. black sesame seed
Combine all ingredients except carrots and sesame seed. Gently boil until clear (4 to 5 minutes). Mix in carrots and sesame seed. Cool. Serve chilled.
