Cold Somen Salad

Tomie Yasak

  • 1 pkg. (9 oz.) somen noodles, cooked

Broth:

  • 1/4 cup sugar
  • 1 cup chicken broth
  • 1/4 cup soy sauce
  • 1/4 cup rice vinegar
  • 2 Tbsp. sesame oil

Garnish:

  • 1/2 head lettuce, sliced thin
  • 1 small cucumber, sliced thin
  • 1/2 block red kamaboko, sliced
  • 1 piece char siu, sliced or slivered
  • 1/2 cup ham slices, cut in strips
  • Sliced Spam or chicken breast (optional)

Combine broth ingredients. Bring to boil and simmer 5 minutes; chill.

Spread somen on platter. Over it put garnish and top with broth.
