Ono Oven Kalua Pig
- 4 to 6 lbs. pork butt, if frozen thaw and score
- 2 tbsp. liquid smoke
- 2 to 3 tbsp. crude salt
- 14 to 16 ti leaves, stems cut off (More or less leaves depending on the width and length)
- Heavy aluminum foil
Wash ti leaves and arrange them in a circular pattern overlapping leaves. In a container place scored butt and rub all sides with salt and liquid smoke. Place butt fat side up on the ti leaves. Fold or wrap butt with ti leaves to completely cover and tie securely with string. Place the wrapped butt on foil and seal well so no steam escapes. Place the prepared butt in a shallow roasting pan and roast in a preheated 450 degrees oven. After 1 hour reduce heat to 400 degrees and cook from 3 to 4 hours longer or until done.
Serve with poi, baked sweet potatoes, lomi salmon etc.
