Cheese Souffle

  • ½ pound medium sharp to sharp cheddar cheese
  • 8 soda crackers, broken
  • 1 tablespoon butter
  • dash of salt
  • 1 cup milk
  • 4 egg yolks
  • 4 egg whites

In thick bottomed saucepan mix cheese cubed with crackers, salt, butter and milk. Melt over low heat, stirring to prevent sticking. Stir in egg yolks and cook two minutes. Remove from heat and beat egg whites until peaks form. Fold whites in mixture and pour into buttered quart-size baking dish that can go to the table. Bake at 350 degrees for 30 minutes. Serves 4 or 5. Serve Immediately!
