Lima Beans Sofrito (Habas con Sofrito)

  • 1 (3-lb.) pkg. pork or beef ribs (or ham, cut into 1-inch pieces)
  • 1 sm. round onion, diced
  • 2 cloves garlic, minced
  • 1/2 bunch Chinese parsley, minced
  • 3 stalks green onion, chopped
  • 1/2 green bell pepper, diced
  • 1/2 tsp. salt, or to taste
  • 1/2 tsp. ground black pepper
  • 1/2 can El Pato tomato sauce
  • 1/2 tsp. Bijol (opt.)
  • 1 pkg. Goya Sazon seasoning
  • 1 can lima beans with ham sauce
  • 1 1/2 c. water

In a saucepot, simmer ribs until brown. Add round onion, garlic, Chinese parsley, green onion, bell pepper, salt, pepper, tomato sauce, Bijol and Sazon. Cook on medium heat for 20 minutes. Reduce heat to low and cook until meat is tender. Remove excess oil. Add lima beans and water. Simmer for 30 minutes. Serve with hot rice.
