Quick Malasadas (Portuguese Donuts)
- 1 package yeast
- ¼ cup lukewarm water
- 4 beaten eggs
- ½ cup cream
- ½ cup boiling water
- 1 cup sugar
- 2 tbsp. butter
- ½ tsp. salt
- 3 cups sifted all purpose flour
Dissolve yeast in lukewarm water.
Combine boiling water, sugar, butter and salt. Cool. Add to yeast, Add eggs and cream and beat well. Add half of flour and beat well. Add remaining flour and beat till smooth. Let it rise for about 1 hour.
Drop by tablespoonful into hot deep vegetable oil. Deep fry till golden color. Drain on paper towel and coat with granulated sugar in a paper bag.
