Tomato Beef

  • 1 lb. sirloin beef, thinly sliced
  • 1 onion, sliced
  • 1 green pepper, sliced
  • 2 tomatoes, cut in quarters
  • ½ stalk celery, sliced
  • 4 green onions, cut in ½” pieces
  • 1 tbsp. salt
  • 1 tbsp. sugar
  • 1 tbsp. cornstarch
  • 1 1″ piece ginger, crushed

Fry beef well in heated oil with ginger. Add all of the vegetables and stir fry a few minutes, sprinkle the salt over. Combine the sugar and cornstarch with about 1/3 cup water and add to beef-vegetable mixture. Stir until gravy is thickened. Do not overcook vegetables.
