Lobster with Dau See (Chinese)
- 1 lobster tail (16 oz.)
- 1 tbsp. oil
- 2 cloves garlic
- 2 tbsp. dau see
- 1 small piece ginger root
- green onion, cut fine
- ¼ tsp. salt
- 3 tbsp. shoyu
- 1 tbsp. wine
- 1 tbsp. sugar
- ½ cup water
- 2 eggs
Cut lobster tail into pieces. Use a sharp knife and cut crosswise where shell sections join. Wash and mash dau see with garlic and ginger. Heat oil, brown ginger, garlic and dau see quickly as it burns easily. Add lobster and stir fry for a minute. Add shoyu, wine and sugar and salt and saute for 1 minute. Add water and cover and cook for 2 minutes. Add eggs and green onions.
