Hawaiian Chicken (Maine Style)

  • 3 cups cooked chicken
  • 3 cans cream of mushroom soup
  • 1/4 cup slivered almonds or water chestnuts
  • 1 cup pineapple chunks, drained
  • 1 can (6 oz.) sliced mushrooms
  • 1/2 cup shredded coconut

Cut chicken into chunks and put into a 2 quart casserole with undiluted mushroom soup. Add other ingredients except coconut. Bake at 350 degrees for 20 minutes or until bubbly hot. Sprinkle with shredded coconut. Broil 5 minutes bor until browned. Serve over rice or in a coconut shell or in pineapple halves. Serve with a green salad. Serves 4.
