Coconut Cream Pie #3

  • 2¼ c milk
  • 1 c sugar
  • 1/3 c cornstarch
  • 3 egg yolks
  • ½ tsp salt
  • 2 tsp butter
  • 1 c grated coconut
  • 3 egg whites
  • 6 T sugar
  • 1-9″ pie shell

Scald 2 c milk. Mix next four ingredients with remaining milk. Add to scalded milk and cook, stirring constantly till thick. Cool. Add butter and ¾ c coconut. Pour into baked pie shell and cover with meringue made of egg whites and the 6 T sugar. Sprinkle with remaining ¼ c coconut and bake 20 minutes at 325° F. or until brown.
