Barbecued Roast of Beef
- 3 to 4 lb. round bone slice of beef 2 1/2 to 3 inches thick
Marinade Sauce:
- 1/2 c. salad oil
- 1/2 c. soy sauce
- 1/2 c. wine – not sweet
- 2 Tbsp. vinegar or lemon juice
- 1 Tbsp. Worcestershire sauce
- 2 cloves garlic, crushed
- 1 tsp. basil leaves, crushed
- 1 tsp. oregano leaves, crushed
- 1/3 tsp. coarse pepper
- 1 Tbsp. parsley, chopped
Marinate beef in sauce for 3 to 4 hours, turning often. Barbecue over hot coals about 20 minutes on each side. Test for doneness. Baste often with sauce. Slice very thin across grain of meat. Heat remaining sauce, being very careful not to boil it. Spoon warmed sauce over the sliced meat and serve. Very good in buns.
