Krispy Chicken
- 2½ to 3 lbs. frying chicken
- 3 to 4 cups rice krispies
- ½ to 2/3 cup butter or margarine, melted
- 1 tsp. salt
- ½ tsp. pepper
Wash chicken pieces and dry thoroughly.
Crush rice krispies into medium fine crumbs.
Melt butter and mix with salt and pepper.
Dip chicken pieces in seasoned butter then roll in rice krispies crumbs until well coated. Place skin side up in shallow baking pan (10×15) lined with aluminium foil, do not crowd pieces.
Bake in moderate oven 350 degrees for about 1 hour or until tender. Do not cover pan or turn chicken while cooking.
