Stuffed Tofu

  • 1 tofu, cut in 1½x1½x3/8 pieces
  • 1 lb. of ground pork
  • 8 water chestnuts, chopped
  • 1 stalk green onion, chopped
  • 1 egg
  • 1 tsp. shoyu
  • ½ tsp. ajinomoto
  • 1 tsp. salt
  • 1 tbsp. chungchoi, chopped
  • 4 small fresh frozen shrimps, chopped
  • 1 tsp. salt
  • 1 cup water for steaming (boiling)
  • 2 tbsp. cornstarch
  • 2 tbsp. oil

Mix pork, chestnut, green onion, egg, shoyu, aji, chung choi, shrimps and salt. Slit one corner of tofu and stuff with pork mixture. Heat oil and brown stuffed tofu on both sides. Leave tofu in pan and pour boiling water and add salt. Simmer for about ½ hour on very low heat. Pour cornstarch and water paste, stirring gravy well. Serve hot with some 1½ inch green onions.
