Franks

Franks are seasoned with a tangy apricot sauce. Use sauce for glazing spitted duck or pork roast, too.

  • 1 cup apricot preserves
  • ½ 8-oz. can (½ cup) seasoned tomato sauce
  • 1/3 cup vinegar
  • ¼ cup cooking sherry
  • 2 tbsp. soy sauce
  • 2 tbsp. honey
  • 1 tbsp. salad oil
  • 1 tsp. salt
  • 1 tsp. grated fresh ginger or ¼ tsp. ground ginger

  • 2 lbs. frankfurters
  • 1 No. 2 can pineapple slices, drained

For the sauce, combine first 9 ingredients. Score the frankfurters on the bias and broil slowly, turning and basting often with the sauce, till hot through and glazed.

Last few minutes grill pineapple rings; Place on grill; brush with basting sauce. broil and turn. Brush again with sauce. Heat remaining sauce to pass with franks. Go-with: a tossed salad. Serves 8 to 10.
