Fish in Casserole
- 3 lbs. ono, ulua, a’u young swordfish or kahala
- 4 c. milk
- 1/2 c. flour
- 4 tbsp. chopped parsley
- 1/2 large onion, sliced
- 1/8 tsp. curry powder
- 2 eggs
- 1/4 lb. butter
- Tobasco sauce
- Grated cheese
Steam fish until thoroughly cooked. Heat milk. Pour a little over flour and curry-powder, stir until smooth, and stir into milk. Add parsley, onion, salt and pepper. Cook over low heat, stirring constantly, until it thickens. Take off heat, beat into it eggs, butter and a dash of tobasco, and put through a sieve. Butter a baking dish, put in a layer of flaked fish, then sauce and repeat, having a layer of sauce last. Cover with crumbs and sprinkle with cheese. Bake 30 minutes in 350° oven.
