Tea
For that perfect cup of tea:
- Bring fresh-drawn cold water to a rolling boil.
- Fill teapot with hot water and let stand until water for brewing tea is almost at a boil.
- Pour hot water out of pot and add 1 tsp loose tea or 1 tea bag per cup (8-oz). If making 4 or more cups, add 1 tsp or bag for the pot.
- Pour still-boiling water over the tea leaves and stir. Cover teapot and let steep for 2 minutes. Stir again, then steep for at least 2 more minutes.
- Strain into tea cups.
- For tea of uniform strength, stir briskly and serve at once. If you want weaker tea, dilute by adding a little hot water.
