Cranberry Chutney

  • 1 lb. fresh cranberries
  • 2 cups water
  • 2 cups sugar
  • 1/4 cup vinegar
  • 1 cup raisins
  • 2 Tbsp. minced ginger
  • 1/2 tsp. salt
  • 1 clove garlic, minced
  • Chili pepper (optional)

Sort berries, discard soft ones, rinse, and drain. Bring water and sugar to a boil. Add berries and remaining ingredients. Simmer, stirring occasionally, until berries have popped (about 10 minutes). Watch, because they will all start to pop at once! Cool, put into sterile jar, and seal.
