Coco-Nut Banana Bread
- 2 cups flour
- ½ tsp. salt
- 2 tsp. baking soda
- 3 eggs
- 1 tsp. lemon extract or lemon juice
- ½ cup soft butter or margarine
- ¼ cup sour cream
- 1 cup sugar
- 1½ cups bananas (3 medium sliced)
- 1 cup nuts
- ½ cup shredded coconut
Sift flour, baking soda, and salt into a large bowl and set aside. Put eggs, soft butter, lemon extract, sour cream and sugar into blender and process at MIX until smooth. Add sliced bananas, nuts and coconut, cover and process at CHOP until nuts are chopped. Pour into dry ingredients and mix until flour is moistened. Pour into lightly greased loaf pans and bake 45-50 minutes. Bake at 325 degrees. Yield 2 loaves.
