Featherweight Coffee Cake

  • 4 tbsp. shortening or butter, melted
  • 1 egg
  • ½ cup milk
  • 1 cup sifted flour (½cake, ½ regular)
  • ½ cup sugar
  • 3 tsp. baking powder
  • ½ tsp. salt

Melt shortening or butter and mix with egg and milk. Sift dry ingredients. Pour liquid into the dry ingredients. Stir. Bake in 8″ square pan.

Topping:   1½ tbsp. brown sugar and cinnamon.
            Dot with butter. Bake for 12 minutes in 375 degrees oven.
