Caballero Casserole

  • 2 (15 oz.) can Tamales
  • 2 (12 oz.) cans Mexi-corn, not drained
  • 1 (14 or 15 oz.) can Pizza sauce

Cut each tamale into 6 pieces. Place half of the tamales in a 2½ qt. casserole. Spread with 1 can corn. Top with remaining tamales and second can of corn. Pour pizza sauce over corn. Spread topping on. Bake at 400 degrees for 30-35 minutes.

Olive Cheese Topping:

  • ½ cup flour
  • ¾ cup cornmeal
  • 1 pkg. cheese sauce mix
  • 1½ tsp. baking powder
  • 2 tbsp. black olives, chopped
  • 1 tsp. salt
  • 1 egg
  • ¾ cup milk
  • ¼ cup cooking oil

In a large mixing bowl combine dry ingredients. Add remaining ingredients and stir until completely mixed. Spread on the tamale and corn layers.
