Baked Tofu

  • 1 tofu
  • 1 round onion, chopped
  • 6 shiitake (mushroom)
  • ½ cup green peas (frozen)
  • 2 eggs
  • ½ carrot (medium)
  • 1½ tsp. butter
  • 2 tsp. salt
  • ½ tsp. gourmet powder
  • Pepper

Soak shiitake in water. When soft cut shiitake, carrot and onion into thin slivers. Boil carrot and shiitake slightly and drain.
Break tofu and squeeze slightly. Put in mixing bowl, add egg and seasonings. Beat well.
Saute onion in butter. Add boiled vegetables and season with salt and pepper. Cook green peas in boiling water and drain.
Combine cooked vegetable mixture and beaten tofu. Add green peas.
Put in buttered pan and bake at 350 degrees for 30 minutes. Serves 8.
