An Mochi

  • 1 big box mochiko, approximately 3½ cups
  • 3 cups water
  • 1 cup sugar
  • 1 can tsubushi an – form into small balls as filling for mochi.

Add sugar into 3 cups of water and bring to a boil. Add mochiko, a little at a time, and mix well. Remove from heat and pound well with surikogi (grinding or pounding stick). Turn out on cutting board covered with mochiko or katakuriko. Break off pieces of mochi, flatten, add ball of an, and cover with mochi.
