Azuki Yokan

  • 1 lb. azuki
  • 3½ sticks kanten
  • 3½ cup water
  • 5¾ cup sugar

Cook azuki until soft. Strain twice, squeeze water out. Boil water and kanten until dissolved. Add an and sugar. Take out scums. Bring this to a boil then cook 1 hour. Pour into square or rectangular pan. When cool, slice or cut in desired shapes.
