Adobo (Vinegared Chicken and Pork)

  • 1 lb. chicken
  • 1 lb. lean pork
  • 2 T minced garlic
  • 3 bay leaves
  • 6 T vinegar
  • 1-1/2 t salt
  • 6 peppercorns
  • 1/2 c boiling water

Cut chicken and pork into serving pieces. In a skillet, combine chicken, pork, garlic, bay leaves, vinegar, salt, and peppercorns. Let stand for 10 minutes. Add enough boiling water to nearly cover meat. Cover and simmer until water is evaporated, about 1-1/2 hours. Brown meat in skillet, adding more fat if necessary.

Makes 6 servings.
