White Coconut Candy
- 1 cup grated coconut
- 1½ cups white sugar
- ½ cup water
- 2 tbsp. light corn syrup
- pinch of salt
- 1 tbsp. butter
- 1 tsp. vanilla
Mix all ingredients except butter and vanilla and put to boil on a high heat. Boil until it forms a thread (228º).
Remove from fire and add butter and vanilla. Stir until creamy and drop by teaspoons on buttered pan.
Makes approximately 18 pieces.
Note: Food coloring and flavoring may be added if so desired.
