Mexidogs

  • 10 Miko frankfurters or Miko natural smoked franks
  • 1 cup flour
  • 1 cup cornmeal
  • 2 TBS. sugar
  • ½ tsp. salt
  • 1 TBS. baking powder
  • ¼ cup oil
  • 1 egg
  • milk
  • 2 tsp. Chili Powder
  • 3 cups shredded cheddar cheese
  • 1 cup catsup or chili sauce or mixture
  • ½ cup finely chopped onion

Combine ½ teaspoon chili powder with other dry ingredients in bowl. Beat egg and add enough milk to make 1¾ cups. Add oil to this, then pour into dry ingredients and stir until moistened. Do not beat. Drop batter on hot, lightly oiled griddle, using about ¼ cup batter for each corn cake. Cook until bubbles form on top and edges become slightly dry. Turn and brown on second side. Remove to warm place. Combine 2 cups of cheese with remaining ingredients except sausages. Mix well, spread on corn cakes. Place 1 MIKO frankfurter across center of each cake and fold cake around. Place in 13 x 9 inch baking dish. Sprinkle with remaining cheese. Bake at 350 for 20 to 25 minutes. 10 servings.
