Roast Duck

  • 1 4-5 lb. dressed duck
  • 2 tbsp. Hoi sin cheong (mixed veg sauce)
  • 1½ tsp. salt
  • 1 tsp. red food coloring (optional)

Rub salt inside and outside of duck. Mix Hoi sin cheong and coloring and rub inside and outside of duck. Let it stand for about half an hour and roast in oven 275 degrees for about 3½ hours.

Cut duck into serving pieces and pour gravy over it before serving.
