Ono Chicken-Pineapple
- 2 pkgs. chicken (preferably thighs)
Dust with:
- 1/3 to 1/2 cup of flour
- 1/2 tsp. celery salt
- 1/4 tsp. nutmeg
- 1/2 tsp. salt
- 1/4 tsp. garlic salt
Put dry ingredients in a paper bag and shake. Add pieces of chicken and shake. Be sure all pieces of chicken are well dusted with the flour-spice ingredients.
Brown chicken in frying pan using frying fat of your choice. Drain frying fat when chicken is brown then pour over the combined mixture of:
- 3/4 cup of pineapple juice (or syrup of canned chunk pineapple)
- 2 tablespoons shoyu
- 2 tablespoons sugar (omit if syrup is used)
Cover and simmer until tender. Before serving add:
- 1 cup or more of canned pineapple chunks
This chicken-pineapple dish may be served with rice and vegetables or a salad of your choice.
